Okay - my love for beets is not a kept secret. So here's a vegan beet recipe that I absolutely love; adding to dip selections, avocado toasts, cheese boards, salad toppings and basically where ever I can find room for it.
4 medium roasted beets
2 carrots
3 cloves roasted garlic
12 pistachios
3 tbs lemon juice
Salt & Pepper
Coriander is also a great addition here but a ton of people don't like it (I suggest adding it - about 1/2 tsp)
Directions:
• pulse pistachios in food processor until coarsely ground
• grate carrot and medium dice the beets add to the processor
• add garlic, lemon juice, salt and pepper & coriander if using
• pulse until desired texture - (I like mine somewhat coarse) add beet juice or water as needed, especially if you want a super smooth dip!
